Flair Bartending Lesson #50: Martini Pour on Head
Good flair can be simple; great flair involves your guests as part of the show. The Martini Pour on the Head is a perfect move for this.
I like to use a Martini glass for this but really any glass that will balance on your head will do just fine. The benefit to performing this move with a Martini rather than, say, a rum & coke, is that you can deliver the drink to the guest immediately rather than taking it off your head and having to top it off with coke or a garnish.
Tips for the Martini Pour on Head:
1) Get comfortable balancing the glass on your head. If you’re having problems, trying wrinkling your forehead to give the glass something to stabilize it. Also, separate your feet a little: give yourself a comfortable stance so you don’t lose balance.
2) Have the drink prepared in the cocktail tin. Use a 16 or 18 oz. tin dropped into the 28 oz. tin upside down.
3) While holding the tin above your head, place your index finger on the highest point of the tin – opposite your face – and use it to hold the tins together. This should create the opening on the bottom mouth of the tin and help direct the flow of the drink into the glass.
4) Involve your guest with this move. When someone orders a Cosmo or a Chocolate Martini, this is a perfect move to serve them their drink. With your back towards them, balance the glass on your forehead and pour about half of the drink. Slowly lean backwards and motion with your hand for the guest to grab it off your head. Finish by pouring the rest of the drink in their glass and high-fiving them for doing such a great job. Practice the backwards lean at home a lot to make sure you won’t be losing the glass off your head and spilling or breaking it in front of them.
